Drip Donut Recipe

Have you ever heard of drip donuts? In some cities we find these donuts in bakeries or fairs and, as the name suggests, it is made with drip (aguardente, cachaça, cane), but the flavor is very subtle! They are delicious, crunchy and wonderful when we use them in syrup and then in confectioner's sugar to decorate!

Ingredients for making donuts:

Donut dough:

 1 egg

 80 milliliters of rum (cachaça)

 120 milliliters of warm milk

 ¼ cup of oil (60 milliliters)

 1 tablespoon of lard

 ½ cup of sugar (80 grams)

 1 teaspoon of baking powder

 3 cups of wheat flour (approximately)

Syrup and coverage:

 ½ cup of drip

 ½ cup of water (120 milliliters)

 1 tablespoon of sugar

 icing sugar to decorate (to taste)

How to make a donut:

Start by separating the dough ingredients from the doughnuts to make the recipe easier.

Tip: This homemade donut recipe is prepared with chemical baking powder, the same used in baking cakes.

In a bowl place the egg, warm milk, drip, oil, lard and sugar, mixing everything with a spoon or a bowl.

Add the sifted wheat flour (little) and mix it with the dough.

Tip: It is important to add the sifted wheat flour to avoid lumps of flour in the dough.

Put the baking powder together with the all-purpose flour and add to the bowl until the dough is just right.

Tip: You may need to add another 1/2 cup of wheat flour until the dough reaches the ideal point, without losing its elasticity.

Work the dough with your hands until it is soft and slightly peeling off your fingers.

Shape the donuts, taking equal portions and making rolls on a bench or in your own hand. Then join the two parts of the rolls so that they take on the shape of doughnuts.

Tip: At this point, preheat the oven to 180-200 degrees. Grease and flour 2 large baking sheets.

If you have a scale, weigh each dough ball so that the donuts are patterned.

Place the donuts on the baking sheets, giving space between them, and bake them in a pre-heated oven at 180 - 200 degrees for approximately 25 minutes or until they start to brown underneath (they don't need to brown on top).

When removing the donuts from the oven, while they are still warm, pass them in the syrup of water with the drip and sugar mixed together and then in the icing sugar, tapping them gently to remove the excess.

Tip: If you want to opt for a milder syrup, try replacing the drip with fennel tea.

Your soft dripping donuts will be ready for you to enjoy with a cup of coffee!
