As the name suggests, this bread is typical of Ceará and traditional at Easter, being best seller at this time of year. Do you want one more reason to try this homemade bread at home? It is made with fresh coconut and is super cute!

Ingredients to make Coconut coconut bread:

500 grams of wheat flour

 100 grams of fresh grated coconut

 80 grams of sugar (½ cup)

 ½ tablespoon of salt

 10 grams of dry biological yeast

 25 grams of melted butter

 200 milliliters of water

How to make Coconut Bread from Ceará:

To make your homemade coconut bread preparation organized, start by separating the ingredients.

Tip: to activate the yeast, the water must be at room temperature or warm (if the day is cold).

Preferably use freshly grated coconut. But if you don't have it, you can use the industrialized grated dry coconut.

Start by mixing the flour, sugar and salt very well in a large bowl. Then add half the water and continue mixing again.

Now add the melted butter to this coconut bread dough from Ceará.

And then the dry yeast.

Tip: Organic dry yeast is also known as instant bread yeast. The amount indicated is equivalent to 1 sachet of this yeast. If you prefer, you can substitute 30 g of fresh biological yeast.

At this point you can start to move with your hands. Add the rest of the water and mix well.

Add the fresh grated coconut.

And strength in your arms, now it's time to beat!

Knead the dough on a countertop until it is smooth, but lightly sticking to your hands. Put it back in the bowl, cover and let it sit for 30 minutes on the countertop or in a place sheltered from the cold and wind.

After that time, shape the dough into the shape you prefer. Here this dough yielded two loaves of about 300g each.

Place the buns on a baking sheet greased with a little butter and let it rest for 2 hours in an enclosed, cool place.

Finally, bake in a preheated 180 degree oven for 15 minutes or until your homemade sweet bread rises and browns.
